Bodéwadmi Carrots, Maple Syrup & Ginger

Root vegetables are easy to preserve over the winter, whether you have a root cellar or a clean and dry pantry. This Anishinaabe recipe of these two favorite root vegies is super easy, loaded with nutrients, and tastes like sunshine.
Ingredients:
Approximately 6-8 medium sized carrots
Approximately 1 Tbsp. diced ginger
1 Tbsp. sunflower oil
1Tbsp. pure maple syrup
Salt and pepper to taste
Directions:
Preheat oven to 350* F/ 176* C
Cut carrots into bite sized pieces and place into small baking or casserole dish
Skin the ginger with a spoon and thinly dice, add to the carrots
Add the sunflower oil, maple syrup, salt and pepper and mixed (I use clean hands to toss but you can use tongs if you like)
Bake for 25-30 minutes and enjoy!
