Kwesmen epe Minene is a wonderful Autumn, or anytime, recipe. This is an amazing side dish or even as a desert. I love to make this during the Gizes Geknan (Harvest Moon).
Even if you don't like to eat squash I feel like you'll still like this wonderful recipe, kids too!
You can use any kind of squash but this time I made it with our heirloom squash, Hochunk squash.
Squash, halved and cleaned.
Berries, any kind, enough to fill the cavity in the squash. I like to use strawberries cut in half (I also keep the tops on for extra nutrition), raspberries, black berries, and blueberries.
Pure maple syrup
wild ginger (or store bought ginger)
Preheat oven to 350* F 176*C.
Spray or rub sunflower oil all over the squash and place on a parchment lined or slightly oiled cooking sheet.
Fill the cavity with the berries
Spray or sprinkle a little more of Sunflower oil
Generously drizzle pure maple syrup across the whole squash and berries
Finely grate the ginger over the top
Bake for 45 minutes to one hour depending on the type and size of squash you're using. It is done with the squash is tender.
