Neshnabe Mnomen Washkbek Pkweshgen (Wild Rice Cakes)

Neshnabe mnomen (wild rice) is one of the main staples for the Anishinaabe people (Ojibwe, Ottawa, Potawatomi, and more). Wild rice is gathered in the fall on the lakes and shores of the Great Lakes and the lakes in the region by gathering the rice with paddles into canoes. Harvesting Neshnabe mnomen is a community event where all come to help in the harvest. In the Anishinaabe culture everything is community and the community is everything.
Neshnabe mnomen washkbek pkweshgen (wild rice cakes) are on of my favorite things to make and one of the favorites for my son to eat.
I like to top the wild rice cakes with Wojapi but you can eat them plain, drizzle with maple syrup, or anything else your taste buds are liking.
6 C water and 3 C water
2 C Wild Rice uncooked
1-2 sprigs of cedar or rosemary
pinch of salt
2 Tbs pure maple syrup
In a medium size pot bring 6C of water and cedar/rosemary to a boil and add the wild rice. Reduce heat and cover, cook for 40 minutes.
Remove 1 cup of wild rice and set aside.
Add remaining 3 C water to the pot with remaining wild rice, bring to a boil, cover and reduce heat. Cook for an additional 40-45 minutes.
Drain excess fluid from the overcooked rice with a small sieve and also remove the cedar or rosemary. I like to keep this as rice stock to use in any recipe that calls for vegetable stock. Wild rice stock is very nutritious.
Puree the overcooked rice in food processor or blender fitted with a steal blade until it makes a sticky dough and pour into a mixing bowl.
Mix in the 1 C of wild rice that you reserved, pinch of salt, and maple syrup.
Preheat a heavy skillet at medium heat on the stovetop, add 3-4 TBS sunflower oil You'll want a good coat of oil on the bottom of the skillet so increase as needed.
Form the wild rice dough into small patties. I like to use an ice cream scoop so that the patties are a uniform and manageable size.
Carefully place the patties onto the skillet and fry uncovered for 6-7 minutes per side.
Pat the oil off with a clean cloth.
Drizzle with Wojapi, maple syrup, or anything of your choosing.
