Fire Cider is a medicine that has been used worldwide in numerous cultures for thousands of years. It may go by a different name and vary with ingredients but the spice and purpose remain the same; to boost the immune system, cleanse the cells, support the gut, assist in metabolism, support cardiovascular health, and cleans/support the Spirit.
Fire Cider is nutrient rich infused maple vinegar or apple cider vinegar packed with vitamin C, vitamin B, pro and pre-biotics for gut health, cold and influenza fighting agents, anti-inflammatory, antioxidants, immune boosters, sugar stabilizers, blood pressure regulators, anti cancer properties, cognitive support, cardiac support, cellular function and purification qualities, metabolic supporters and more. **
The cool thing about Fire Cider is you can make it with any ingredients you want and right from home. Ingredients typically found in Fire Cider are; onions, garlic, turmeric, ginger, black peppercorn, jalapeno's, Thai chili's, habanero's, lemon slices, orange slices, horseradish, rosemary, culinary sage, oregano, thyme, cedar, other herbs, with maple vinegar or apple cider vinegar.
I use ingredients that are organic, grown locally, or that I've grown and harvested here on the farm.
My usual recipe for one quart jar:
1/2 cubed onion
one whole head of garlic (smashed)
sliced fresh turmeric root (about 1/4-1/2 cup)
fresh ginger root slices(about 1/4-1/2 cup)
1/4 C fresh grated horseradish
whole black peppercorn (1/2 Tbs)
4 jalapeno's sliced (You can also use Thai chilis, habaneros, ghost pepper, or any spicy peppers to your liking)
1 sprig rosemary
a few leaves of culinary sage
1 tsp oregano
1/2 tsp cedar
1 Tbs Echinacea
1 Tbs Hawthorn Berry (for heart/blood pressure health)
1 tsp Horseradish
Maple Vinegar or Apple Cider Vinegar with the Mother
topped with two lemon slices.
Pack all of your ingredients into a clean and sterile quart jar and pour in organic maple vinegar or apple cider vinegar (with the mother) - I then add the lemon (or orange) slices to keep everything down as well as add to the nutrient value. Put a lid on your jar and then place your Fire Cider in a room temp/cool and dark spot ( a pantry does well). Someone told me a tip to keep your lid from rusting is to put a piece of parchment paper between the lid and the jar or you can invest is some fermentation lids.
In 3 weeks to 3 months is the longest I've let my Fire Cider set but a Lakota friend of mine has let some of hers set for a year and she'll even eat the veggies from the jar. I don't have time to wait that long so the longest I've let mine set is about 3 months. *Of course if there's any slime or obvious mold do not consume, throw it out.
At the end of your setting period make sure you check the top of the liquid for any signs of mold or slime. It should smell like amazing hot sauce. Strain the liquid out using a cheese strainer, tea strainer, or even cheese cloth. Put the liquid back into the jar and I like to add about 1/2-1 cup raw honey but you can use maple syrup or agave if you prefer and refrigerate. I drink 2-4 ounces per day. I just put it in a shot glass and down the hatch first thing in the morning. My kids too, this is their daily vitamin.
Fire Cider also makes amazing salad dressing and delicious marinades for recipes that call for vinegar.
Now for the left over veggies. When I have time I will lay them out on a cookie sheet lined with parchment paper and dry them in the oven at 270F. Once they're dry I put them in a food processor until finely ground then add some honey. Form into small bite sized balls and put in a seal-able container. Refrigerate and these make a super nutritious snack.

Onion - very nutrient dense and packed with vitamin C, antioxidants, and elements which aid in collagen production, cancer fighting compounds, tissue repair, heart health, symptoms of PCOS (Poly-cystic Ovarian Syndrome), blood sugar balance, bone density boosters, antibacterial properties.

Jalapeno - loaded with vitamin C, B5, A, K, Folate, and Manganese. Jalapeno's offers metabolism support, anti cancer properties, pain relief, stomach ulcer prevention, antibacterial and antiviral, and heart support. Thai chili's and habanero's have the same quality's but so much more.
Rosemary - antioxidants, anti inflammatory, immune support, blood circulation, hormone balance, cognitive stimulant, antibacterial.
Sage - GI support, immune support, anti bacterial, anti viral, anti fungal, mental performance, hormone balance.

Cedar - Cedar is a sacred medicine to Indigenous people all over Turtle Island so only take what you need. Only use a little in your cider because Cedar is a purifier, too much will keep you in the bathroom for the day. Cedar also has nutrients for urinary cleanse and support, blood cleanse and support, respiratory cleanse and support, gut health, and cardiac support.
Horseradish - loaded with nutrients that help fight respiratory infections, urinary infections, urinary stones, edema, nerve pain, gout, and colic.
